Our Duck Fat is rendered under USDA inspection and has a Water Activity Level well below 0.85, meaning that there is not enough moisture in the Fat to support the growth of bacteria, yeasts, and mold. According to FDA standards our Duck Fat is shelf stable and it is safe to ship without refrigeration. However, refrigeration or freezing is recommended after you receive and open your Duck Fat.
